Alain Ducasse Enterprise, founded by the famous chef with 19 Michelin Guidebook stars, has focused on the universe of gourmet cuisine and hospitality, with 24 restaurants and three luxury inns in France and abroad. “Les Maisons d’Alain Ducasse”, Training and Consulting, “Chateaux et Hotels Collection”, a hotel chain with 520 member facilities, and “La Manufacture de Chocolat”.
A company with many an opportunity to offer, where a host of Vateliens work, such as Chahrazade Baroudi, the Sales and Marketing Manager in charge of developing the F&B part of the IDAM by Alain Ducasse Restaurant in the Qatar Museum of Islamic Art in Doha; Delphine Heraud, the Restaurant Manager at the Meurice; Olivier Guenot, a Project Leader and Table Arts Manager, or last but not least, Charlotte Delemarle, the Group’s F&B Corporate Assistant in Paris.
Charlotte came with Raphaelle de Crepy, the Human Resources Manager, to present internship opportunities and job vacancies in the Group. Let’s have a closer look.
Charlotte, as you’re a Vatelien who has worked for the Alain Ducasse Group for ten years now, can you explain what values both groups share?
The key values of the Alain Ducasse Group include passion, thoroughness, pleasure and sharing. So this is what we’ll be looking for when we interview students and newly grads. Vatel’s curriculum conveys the very same values to its students, both in operational courses and in management courses.
In your opinion, what are the main qualities that students should be working on?
As I explained to students in our presentation, Chef Alain Ducasse attaches great importance to memory and curiosity, tradition and modernity. This could seem to be contradictory to you, but in reality this means never forgetting where you come from while continuing to innovate. Our employees must be detail-oriented and full of curiosity.
And what about skills?
Our Company always targets excellence; it develops innovative ideas and makes sure they are sustainable. This never-ending quest for perfection finds its roots in the men and women who we hire. They must prove their thoroughness, adaptability and reactivity. Both in the restaurant and in the hotel, you have to know how to work well with deadlines that are often quite short and have a good relationship with the other team members.
What internship and job opportunities did you present to Vatel students?
We regularly have several internship and job opportunities in our four different activities. We’ve got internships in support functions such as marketing at CHC, in sales for our Parisian restaurants, in finance and auditing in our operational divisions. But we’ve also got opportunities in our restaurants, for those who love working in F&B.
Alain Ducasse is always expanding. In 2015/2016 there will be several facilities opening throughout the world, and we’re always on the look-out for talents, either in France or abroad, who would like to experience a launch with us.
