These are the values he strives to convey in his Management and Company economics courses at Vatel Nantes since it opened in 2018. “Students of this generation are very open, at ease when speaking, and like to work in groups to help each other out. They’ve brought a lot to our profession and will soon be key players in its renewal.”
In his two courses, students are introduced to administrative concepts and learn now to use their first analytical tools. They discover commercial indicators and the basics of accounting to be able to analyze a profit and loss account and the activity in their workplace. In economics, they discover the mechanisms linked to the company in a global overview, which are also linked to the administration course.
Being able to understand the global management of a structure tells managers whether or not it is successful.
Francois Perraud sees administration as essential for Vatel students, whatever they’re hoping to do later on. This is why he wanted to teach. “Administration is essential for future managers in the hospitality industry. Being able to understand the global management of a structure tells managers whether or not it is successful. Today we observe a trend that aims to empower more and more onsite managers in administrative issues: forecasts, budget, dashboards, monitoring expenses, etc. For tomorrow’s executives or entrepreneurs, both courses - administration and corporate economics - make sense as they teach indispensable dimensions when creating or acquiring a company. Especially from a financial point of view,” he concludes.

It is with great joy that we welcome our students back to Vatel schools. Of course, the virus is still around and so. we must all – cheerfully - respect the health measures put in place in our schools and training restaurants and hotels.Read more
