The Food & Beverage Director, also known as F&B Manager, is a key executive in hotels, resorts, and high-end establishments. They coordinate and supervise all activities related to food and beverage services.

Main Duties of a Food & Beverage Director

The Food & Beverage Director has a strategic and operational role:

  • Supervise all food and beverage outlets (restaurants, bars, room service, banquets, catering, etc.).
  • Guarantee service quality and customer satisfaction, ensuring compliance with the establishment's standards.
  • Manage teams: Recruit, train, motivate, and evaluate front-of-house, bar, and sometimes kitchen staff.
  • Optimize financial management: Control costs, negotiate with suppliers, monitor turnover and profitability.
  • Implement commercial and marketing actions to develop business (promotions, partnerships, events).
  • Comply with hygiene and food safety standards across all food and beverage areas.

Skills of a Food & Beverage Manager

To succeed in this highly responsible position, several skills are essential:

  • Leadership and management: Ability to supervise and motivate large, multidisciplinary teams.
  • Organization and management: Rigorous monitoring of inventory, budgets, and profitability.
  • Excellent communication: Smooth relations with clients, suppliers, and management.

Training to Become a Food & Beverage Director

A Food & Beverage Manager position is generally obtained after several years of experience in catering and/or hospitality, often as a Chef de Rang, Maître d'hôtel, or Restaurant Manager.

The most suitable training programs include:

  • BTS Hôtellerie-Restauration (Higher Technician Certificate in Hospitality-Catering) with a management option;
  • Bachelor's degree in Hotel Management;
  • Specialized MBA in Hospitality, Catering, and Tourism;
  • Further training in management, hospitality management, or marketing.

Salary of a Food & Beverage Director

Remuneration varies according to the size of the establishment and the level of responsibility:

  • Entry-level: Between €3,000 and €3,500 gross per month;
  • Experienced: Between €4,500 and €6,000 gross per month;
  • In international luxury hospitality: Salary can exceed €8,000 gross per month, along with benefits (accommodation, bonuses).

Possible Career Evolutions

After several years of experience, a Food & Beverage Manager can progress to:

  • Hotel Director or General Manager of a resort;
