Restaurant Server

The Restaurant Server is one of the first faces a customer encounters upon entering an establishment. Tasked with ensuring a smooth, pleasant, and professional service, they play a central role in the customer experience. 

Main Duties of a Restaurant Server

The Server holds a versatile position that requires both rigor and friendliness. Their main duties notably include:

  • Greeting and seating customers courteously, creating a friendly atmosphere.
  • Presenting the menu and advising customers on dishes, wines, and set menus.
  • Taking orders and transmitting them to the kitchen or bar via management tools.
  • Ensuring table service (dishes, drinks, desserts) with speed and precision.
  • Monitoring the progress of the meal and responding to customer requests.
  • Preparing and setting tables before and after service.
  • Collecting bills and managing payments.
  • Maintaining a clean and welcoming dining area in coordination with the team.

Required Skills

To succeed in this profession, a Server must possess:

Technical Skills:

  • Knowledge of service techniques (plate service, tray service, French service).
  • Proficiency in order taking and payment processing.
  • Basic notions of sommelier skills or bartending depending on the establishment.
  • Speed of execution and good organization.

Human Qualities:

  • Excellent presentation and a welcoming demeanor.
  • Patience and stress management, especially during busy periods.
  • Good interpersonal skills and active listening.
  • Team spirit and versatility.

Proficiency in a foreign language, particularly English, is an asset in tourist or hotel restaurants.

Training to Become a Server

It's possible to become a Server without a specific diploma, but certain training programs facilitate entry and progression:

  • Service in Catering (RNCP Titles 3 and 4) at Vatel Academy: comprehensive training to advance more quickly in an excellent setting.
  • CAP Service en salle (or CAP Commercialisation et services en hôtel-café-restaurant - Vocational Aptitude Certificate in Restaurant Service or Commercialization and Services in Hotel-Café-Restaurant).
  • Bac professionnel commercialisation et services en restauration (Professional Baccalaureate in Commercialization and Services in Catering).
  • Additional training in foreign languages or sommelier skills.

Salary of a Restaurant Server

A Server's salary varies depending on the establishment, experience, and type of catering (traditional, gourmet, hotel, fast food).

  • Beginner: Approximately the SMIC (minimum wage, €1,766 gross/month in 2025).
  • Experienced Server: €1,900 to €2,200 gross/month.
  • In gourmet restaurants, earnings can be higher thanks to tips.

Possible Career Evolutions

The Server profession offers numerous career progression opportunities:

  • Chef de rang, then Maître d'hôtel in traditional or gourmet catering.
  • Restaurant Manager or Restaurant Director.
  • Possible specialization in sommelier skills or bartending.
